I am just calling this Mediterranean Chicken Dinner. It is a one skillet meal, easy to make and loved by my entire family!
Mediterranean Chicken Dinner
4-6 chicken breasts diced and cooked
2 small zucchini
4 stalks of celery
6-8 oz fresh mushrooms
1 sweet onion
Olive oil for sautee
Sun Dried Tomato Pesto Sauce
Freshly Grated Parmesan
First I cut the chicken into bite sized pieces and fried them in olive oil until well done. Put then on a plate while you use the same pan to saute the vegetables.
Combine all of the veggies and sautee on high to an al dente' cook. I wanted mine to have just a little bit of crunch to them still. You may want to add the fresh mushrooms in at the tail end so they don't shrink too much.
Put the cooked chicken back in the pan and mix well.
Add Sun Dried Tomato Pesto Sauce by Bella Sun Luci
Warm on medium heat and combine well
Put freshly grated parmesan on each individual serving
