Word of the Year #Health
This week's focus has been working on new recipes for my healthy eating. I am starting to get the plan down more and have been able to venture into the recipe realm rather than sticking with a few things I new to be on the plan.
I have so been craving pizza, one of the hardest things to go without on a 'diet'. Fortunately the authors of Trim Healthy Mama knew this and provided several recipes for grain less crust.
Here is one from the book that was quick and easy, containing mostly cheese and egg for a nice crispy crust. The kids even loved it! Three weeks on the THM plan and I have lost 8 pounds!
Gluten Free Egg & Broccoli Casserole
1 Dozen Eggs
1/2 cup almond milk
1/2 cup almond flour
1 cup shredded cheese
1.5 cups broccoli
salt and pepper to season
Mix all together and place in coconut sprayed 8 by 8 pan
Bake at 350 for 30 minutes (give or take)
Wonderful tasting!! We made our own mini version to take with us to church and then put this one in the line up of foods. My children really loved it. My past recipe would include bread and milk and no vegetables. This will be a keeper on our menu for sure!
I walked 2 days last week. I am hoping to get more exercise in this week. It is hard when it is cold, but I have a Wii fit and a treadmill so that shouldn't be an excuse.
Spiritual Health I am still working through writing Acts. I have had some great Wow moments of.. I didn't know that happened, or the Word said specific things. I tend to read too fast and miss things. Love that it is slowing me down to really consume the word
Hubby worked on a poster to put up in the house to help the kids think on Phillipians 4:8-9
Organizational Health I have put a majority of my fabric away in my new cabinet. I am still working on organizing the room, but it is coming together. We also were working on my daughters room to declutter. We have plans to paint her walls and get a bit more organized with that.
